Comentarii generale: Un vin rosu foarte placut si prietenos, extrem de
popular. Aromatic, cu taninuri moi si durata buna dar, in acelasi timp, complex
si foarte bogat, este un vin care se bea usor in orice ocazie. O alegere sigura
pentru masa de duminica cu familia.
Soiuri de struguri: Xinomavro(1/3), Krassato (1/3), Stavroto (1/3).
Tip: Vin rosu sec.
Categorie: Denumire de Origine Protejata Rapsani".
Caracteristici: O combinatie seducatoare de cirese uscate la soare, zmeura
si coacaze se imbina cu arome de pasta de masline, tomate si un iz de
condimente si vanilie. Culoare rosu rubiniu inchis. Palatin elegant, catifelat si
vibrant cu finis persistent fin.
Viticultura: Conform traditiei de Rapsani, toate cele trei soiuri sunt cultivate impreuna in vie, estimand o proportie de cate o treime din fiecare soi. In cazul RAPSANI, toate fructele sunt crescute impreuna in parcele mici cuibarite pe pantele Muntelui Olimp la o altitudine intre 250 - 350 metri deasupra nivelului marii. Acolo, conditiile de microclimat si solul nisipos, argilos si calcaros formeaza un subterroir distinctiv de vite cu vechimi intre 15 si 30 de ani.
Recoltarea reprezinta o provocare pentru producator, deoarece acesta trebuie sa estimeze cel mai bun timp de culegere pentru toate cele trei soiuri, care nu urmeaza acelasi proces de maturare. In conditii normale, strugurii sunt culesi manual la sfarsitul lunii septembrie.
Vinificatie: Toti strugurii -la cel mai bun nivel de coacere- sunt
co-vinificati. Fermentatia are loc la 28-30C pentru 8-10
zile, urmata de fermentatia malolactica. Mustul rezultat este transferat in
barricuri mici de stejar frantuzesc (Allier) de 300 L (50% noi - 50% a doua si
a treia umplere) pentru 6 luni, urmata de cel putin alte 6 luni invechire la
sticla.
Alcool: 12.5% vol.
Asocieri culinare: A se servi la 18C ca un compliment fin
la foie gras, carne de pasare, carne rosie usor asezonata si branzeturi cu
arome puternice, tocana de vita si fripturi.
