General comments: | The new winery Canava Chrissou – Tselepos is located in Santorini and is the fruit of the cooperation between Yannis Tselepos, the owner of the estate of the same name in Arcadia, and the Chrissou family from Santorini. The driving force behind this initiative was Yiannis Tselepos’ constant search for new challenges in his winemaking activity and the Chrissou family’s vision to revive the old Canava and use its private 12-hectare vineyards in Pyrgos, Emporio and Megalohori. |

Characteristics: | A wine of unique intensity, which combines the traditional “Nykteri” winemaking method with a more innovative approach. Aromatic, multi-layered character of ripe, caramelized citrus, honeycomb, toasted nuts and hints of vanilla. Exuberant, rich and ripe mouthfeel with very good condensation and a lingering finish. A gourmet wine due to its complexity, with great aging potential. Authentic and rich character of the variety and terroir. |
Vinification: | Harvesting grapes at the maximum level of natural ripening. Using the vertical press, on whole grapes. Alcoholic fermentation in large French oak barrels at a temperature of 16-17°C followed by aging the wine on its fine lees for 8-9 months. After bottling, the wine ages in the bottle for at least 6-7 months. |
More information: | Area: Terraces on the south-western slopes of Pyrgos, Santorini Island. Age of vineyard: 100 years old, centennial vines, planted in terraces, in the traditional basket shape. Soil: Sandy and porous soil rich in pumice stone & volcanic ash. |
