Characteristics: | Byzantino is a wine produced for the use by the Orthodox Church. Bearing in mind the long unfavorable combination of starch and acid for the priests, it was created a need for the production of a special ecclesiastic wine, which has the smallest possible values of acidity, and thus is ideal for long term use.
This wine has a low degree of alcohol, so that the priests do not have any problem after the use of Holy Gifts, while at the same time it has a high content of natural grape sugars. So it does not lose its sweetness and warmth after dilution. Byzantino contains only natural sugar grapes. This is something that everyone can easily check in an enological laboratory. Such a sweet wine manages to maintain the stability itself against re-fermentation, without needing the addition of other substances. |
