Characteristics: | Red color, not very dark, typical of Xinomavro, which initially shows intense barrel, vanilla, coffee and toast aromas. However, as the wine spends time in the glass, the nose opens up to reveal the character of the variety, composed of strawberry, blackberry and tomato. The palate shows a round mouthful, refreshing acidity, firm and powerful tannins, which create a youthful style. The long aromatic aftertaste is punctuated by notes of strawberry, tomato and mushroom, characteristic of the Xinomavro. Ageing potential:10-15 years. |
Vinification: | The grapes are handpicked and sorted on a conveyor belt before crushing. After pre-fermentation for 4 days at 8-10°C, the must goes through vinification for 12-15 days, at controlled temperatures. Both French and American oak barrels are used, new oak up to 15%, and 40% of 500 lt. It filters very easily. 16 months in 225L and 500L French and American oak casks for the 90% of the blend. The remaining 10% is matured in the tank. Further ageing in bottle for another 6 months. |
