General comments: | Oenops Wines was founded in late 2015 by the talented oenologist Nikos Karatzas, former creator of Pavlidis wines. The winery is located in Protosani, Drama, a region known for wine since ancient times. Nikos’ objective is to produce authentic wines at an extremely high quality standard, wines in which the variety and the terroir speak more than the intervention of the oenologist. A big fan of local varieties, Nikos is constantly looking for the best quality grapes from old vines. |

Characteristics: | These wines come from vines aged between 15 and 50 years. The nose is intensively fruit-driven with aromas of cherry, fresh berries and tomato leaves. The palate it is well balanced, smooth and fruity, while Xinomavro gives freshness and intensity and shows good vibrancy on the medium plus finish. Ageing potential: 6-9 years |
Vinification: | The grapes are sorted then go directly into slow fermentation which takes place in stainless steel tanks, open barrels and cement tanks. Aging for 9-10 months on fine yeasts, in the same containers, before the final assembly. |

Food pairing: | Grilled vegetables, salads with nuts, grilled meats, charcuterie and yellow cheeses. Its unique structure makes it also good with spicy sauces. Very good for aperitif. |
