Characteristics: Balanced taste and aroma, slightly bitter aftertaste, which persists. It has a bright green color, which on curing becomes greenish. The aroma is characterized as strong fruity. It has low acidity (<0.6%), very low values of the absorption indicators (K232, K270), of the deviation of the absorption coefficient (DP) and of the number of peroxides.
Produced from olives of the Koroneiki variety, this extra virgin olive oil comes from the region of Messara, Crete (the largest plain of Crete, which lies in the southern part of Heraklion prefecture, below Mount Psiloritis).
Due to xeric conditions prevailing in the area of Messara in South Crete, the content of unsaturated fatty acids is increased and the nutritional value of this extra virgin olive oil is high.
